Carmine 'Carmy' Berzatto, a renowned fine-dining chef, returns to his family's dilapidated sandwich shop, The Original Beef of Chicagoland, in Chicago's River North neighborhood after the suicide of his older brother, Michael. He inherits a business teetering on the brink of financial collapse, riddled with debt and still operating under chaotic, outdated systems. Carmy attempts to instill discipline and efficiency, introducing brigade de cuisine concepts, new menu items, and a focus on cleanliness, much to the chagrin of the long-time staff, especially Richie Jerimovich, Michael's best friend and the de facto manager, who resents Carmy's changes and his perceived snobbery. Carmy hires a talented, ambitious young chef, Sydney Adamu, who graduated from the Culinary Institute of America. Sydney, initially an outsider, quickly proves her worth, trying to bridge the gap between Carmy's high-end vision and the shop's blue-collar reality, but also struggles with the shop's toxic environment and Carmy's intensity. The financial strain is immense, with mounting bills and taxes, and the shop is barely breaking even. Carmy discovers that Michael owed Uncle Jimmy Cicero a significant amount of money. The pressure escalates, leading to frequent shouting matches, kitchen mishaps, and personal breakdowns among the staff, including Marcus, the pastry chef, who becomes obsessed with perfecting donuts and focaccia. A disastrous catering order for a child's birthday party highlights the shop's operational deficiencies and nearly breaks the team. Amidst the chaos, Carmy grapples with his grief, imposter syndrome, and the burden of living up to his brother's legacy while trying to save the family business. He finds a box of unsent letters from Michael containing large sums of money rolled up inside tomato cans, with a note hinting at 'let it rip.' This discovery, sparked by Sydney's idea to find a way to make the cans profitable, provides the capital needed to pay off their debts and, more importantly, inspires Carmy to close The Original Beef and open a new restaurant called 'The Bear,' signaling a fresh start.
